A universal favourite dish would be potato fry. I hope you won’t disagree with me. Given below is a very quick and flavourful recipe of baby potato fry.
- Baby potato-20
- Coconut oil- To cook
- Pepper powder-1/4 tsp
- Chilly powder-1 tsp
- Hing-1/4 tsp
- Turmeric powder-1/4 tsp
- Salt-To taste
1.Wash and rinse baby potatoes well until the sand/clay is removed completely.
2.Pressure cook them for 3 whistles.
3.Peel the skin,prick them with a fork to make tiny holes and separate them aside.
4.In a mixing bowl add 1 tbsp of coconut oil. Add pepper powder,red chilly powder,hing,turmeric and salt to it.
5.Mix it well and add potatoes to it. Let it marinate for 20 minutes.
6.Heat a kadai and add 1/2 tbsp oil. Add the potatoes to it and keep tossing.
7.Toss until the masala turns crispy and sticks to the potatoes.
Use of coconut oil gives a special flavour.
Cook in medium flame.
Toss the potatoes . Do not stir/fry as the potatoes might mash/break.
You can also add a pinch of garam masala powder if you wish.
You can temper this with mustard seeds ,urad dhal and curry leaves.
Do not over cook the potatoes .
